A cheese with smoked flavour and and intense personality.

It has a cylindrical shape and is smoked, wrapped in rope, by the method of pasta filata.

It is usually produced from cow milk or mixed milk from cow, sheep & goat.

Usually accompanied by white wine and used in salads or as an appetizer.
